Chicken Taco Recipe with Corn Tortillas

Ingredients
For the Chicken:
- 2 chicken breasts, diced
- 1 tbsp olive oil
- 1 tsp chili powder
- 1 tsp paprika
- 1/2 tsp cumin
- 1/4 tsp garlic powder
- Juice of 1 lime
For the Optional Creamy Cilantro Sauce:
- 1/2 cup Greek yogurt (or sour cream)
- 1/4 cup fresh cilantro, chopped
- 1 tbsp lime juice
- 1 small clove garlic, minced
- 1 tbsp olive oil
- Salt and pepper to taste
For the Tacos:
- 6 corn tortillas
- 1 ripe avocado, sliced (optional)
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/4 cup chopped red onion
- Optional toppings: fresh cilantro, crumbled cotija cheese, jalapeños, lime wedges
Instructions
- Marinate the Chicken: In a bowl, mix olive oil, chili powder, paprika, cumin, garlic powder, and lime juice. Add diced chicken and marinate for 15–20 minutes.
- Cook the Chicken: Heat a skillet over medium-high heat. Add the marinated chicken and cook for 5–7 minutes until golden and fully cooked. Set aside.
- Make the Cilantro Sauce (Optional): In a blender or food processor, combine Greek yogurt, cilantro, lime juice, garlic, olive oil, salt, and pepper. Blend until smooth.
- Warm Corn Tortillas: Heat tortillas in a dry skillet or over an open flame for 30 seconds on each side until lightly charred and pliable.
- Assemble Tacos: Layer each tortilla with shredded lettuce, chicken, diced tomatoes, and red onion. Serve avocado slices and creamy cilantro sauce on the side so everyone can add their own twist.
- Serve: Add a squeeze of fresh lime juice and enjoy!
